I've read that if you complete all the challenges in Challenge Mode, you unlock everything; the directions for the challenges are in Japanese, but fortunately these days there's a FAQ on GameFAQs in English that explains them. : ) Some require you to do things that I never really bother learning in KOFs, like throw escapes and the like; you can see me do really badly with that stuff in this video of brute-forcing my way through challenges 3-9 : o
