Every single one of these recent Castlevania games I've played, I start out loving it and playing a lot, but then lose interest almost exactly 2/3 of the way through. Well with me I'm absolutely fine until the boss. I gave up on Circle of the Moon right at the boss, and the same thing with the first DS one.

That's what I meant. I don't know how impossible the bosses are because I never get that far. I did beat Dawn of Sorrow, but I never managed to stick with it that far in any of the others I've played.

Actually, I stopped playing Dawn of Sorrow about 2/3 in as well, but eventually went back to it and finished it a couple months later. I still keep Circle of the Moon, Aria of Sorrow and Portrait of Ruin around in the hopes that I may one day go back to them as well. Time is slipping, though. It seems like the longer you go without playing a linear sort of game like this, the harder it is to get back into it when you finally do go back. I'd be tempted to just start over, but I'd probbaly lose interest 2/3 of the way in again.
