For my own, single-player playing, my favorite thing turned out to be random-character 1-round battles at max difficulty played through SvC's practice mode. With the ridiculous balance, and some nutty stage designs, it's pure insanity. : D Secondarily, arcade mode in CvS Pro. The AI isn't very challenging in CvS or CvS2, though--except for some of the CvS2 boss battles, of course.
